Fresh outta the oven double chocolate chip cookies! (the chocolate chips are still all melty, oooooh)
I’ve made these a few times now and they never seem to fail. They’re the kind of crispy, yet chewy, yet soft in the middle cookie you dream about. …I’m not the only one who dreams about vegan cookies, right? O_o
Anyway the recipe comes from the PPK and can be found here. I halved the recipe and still got 18 cookies out of the mix!

Healthy banana bread with dark chocolate chips and sunflower seeds, pre and post baking. (Vegan, GF, all natural sugars.)

This turned out really well! And for once no fancy gluten free flours were required - it’s simply ground up oats. There’s also only 1 tbsp of coconut oil; any other fat comes from almond butter. Normally I would say what I would change next time but I love this recipe just as it is! The recipe can be found here. :)

Kale, frozen banana, pineapple and kiwi, unsweetened almond milk, cinnamon, vanilla, flaxseed and organic almond butter smoothie topped with coconut and served with a pretentious side strawberry.
This mix was… not my favourite! The almond butter took away all sweetness. I thought it would make it more ‘tropical’ but nope. Bleh. I gulped this all down, nonetheless! Goodness is goodness, even if it’s not the most palatable of things.
I know tomorrow in Sunday - which means a day off the green smoothie wagon - but I haven’t been sticking to the exercise like I said I would, so no breakfast treat for me tomorrow. I’ll try and make a really nice kale monster instead. :)

Breakfast - Hulk smoothie! Aka curly kale, frozen banana, strawberries and raspberries, flaxseed, cinnamon and unsweetened almond milk. Topped with apple and honey oatbran granola. And decorative, poncy strawberry.

This didn’t taste of kale, huzzah! So many blogs say they can’t taste it, but I never believed them because kale is ~such a strong taste. There’s one large handful in here, so about a heaping cup. The after taste is a little ‘green’, but it’s not unpleasant! It was definitely palatable, so that’s good. The whole smoothie is a little under a pint - it’s three hours later and I’m still not hungry! :)

I think I’ll go with my fave green combo tomorrow - frozen banana, pb, cinnamon and flaxseed. Oh, and of course kale. Can’t forget that kale.

Healthy popping corn (slightly sweet);

El Picante - Paprika Baguettes, Spiced Chilli Peanuts and Jumbo Corn.

Cookies & Cream - mini cookies, white chocolate, hazelnuts & sunflower seeds;
Summer Berry Compote - with wholemeal English shortbread.
I’ll definitely have to try making wholemeal shortbread one time, because this is so delicious, crumbly and not too sweet. Yum. :3
