Treated myself to a Graze box - I got a deal of 3 boxes for half price, so I’m utilizing that offer! :D
Soy milk hot chocolate and popcorn from Cafe Nero! :)
I need to get an air popper so I can make popcorn like this at home.. or maybe I don’t, because I’d likely become addicted!
Pistachios, red grapes, peach and pear soya yoghurt with chia seeds and spelt crackers.
One of my favourite snacks - strawberry and banana soya yoghurt with chia seeds and a kiwi. :)
Lunch - sweet potato, almond butter, cinnamon, maple syrup, almond milk and soya butter mash with crushed walnuts on top.
It may not look like a lot here, but I had a serious food baby going on after this - trust me, there’s a lot, haha.
Cranberry, banana and orange juice smoothie.
Simple, tasty and healthy. I really didn’t have enough smoothies at uni - I forgot how much I loved them! :D

I’ll definitely have to try making wholemeal shortbread one time, because this is so delicious, crumbly and not too sweet. Yum. :3
My last Graze box! (I know I’ve said before that I wouldn’t order any more - but I wanted one last one before university.)
This is the best box I’ve ever had, guh. Every single thing was beyond delicious. Also - I love the new popcorn! I put it in the microwave for a minute and a half then suddenly I was presented with a bag of ~healthy popcorn! It’s only 95 calories a bag. Crazy.
I shall miss you, Graze.
Vegan nachos!
I baked a Linda McCartney sausage first, then placed some lightly salted tortilla chips on a plate with diced red and yellow bell pepper, tomato salsa, the sausage crumbled up and a splash of reggae reggae sauce. I warmed this all up in the oven for a few minutes then topped with shredded romaine lettuce and some avocado - yum!
Baked sweet potato with natural almond butter, cinnamon and a drizzle of maple syrup.
(I think this is my new favourite food. It’s simply wonderful. Absolutely wonderful.)
Dark Chocolate Dipped Pecan Coconut Macaroons. (recipe can be found here!)
These are one of the few baked goods that actually taste better once cooled. Don’t get me wrong - they were still delicious and gooey once straight out of the oven, but after 2 hours in the fridge, with the chocolate cooled down - the macaroons had become really crisp on the outside but still soft on the inside.
Naturally, these are vegan - but they can easily be made gluten free, too! :)
Braeburn apple slices with almond butter.
I know, I know… that looks like a tiny amount of almond butter. Occasionally fingers accidentally fall in the almond butter and you have to lick it off. Then this process repeats. Until you realize now there’s hardly any left for your apple. These things just happen sometimes. You know how it is.
Oh, what are these you ask?
Only homemade chocolate chip cookies with a hint of cinnamon, straight from the oven so they’re still warm with melty chocolate chips, a crisp edge and a soft, fluffy centre.
It’s okay to be jealous.

Raw Cacao & Cinnamon Kale Chips from InSpiral Lounge, Camden.
These were so good! Expensive, but so good. They taste a lot nicer than the kale chips I’ve made myself. All I could taste was the cacao - admittedly there was a little bit of a kale aftertaste but I like that, so. It really depends on your taste buds.
The ingredients are: Kale, Cashews, Low G.I. Pure Coconut Palm Sugar, Raw Cacao Powder, Cinnamon, Vanilla Pods and Himalayan Crystal Salt.
Also, the packaging is “Eco Packaging” and can be recycled. How fab! :D
Post-lunch snack - brown rice cake with chocolate spread (it’s just mashed banana and cocoa powder!) topped with shredded coconut and cacao nibs.
