Strawberries are so good this time of the year. I love berry picking in the summer, hopefully I’ll have time to do it again this year! :D

Lunch today was a beast of a sandwich - toasted wholemeal bread with lemon and coriander hummus, spinach, zucchini and carrot. Oh, and a few Japanese rice crackers.
You look like a fool trying to get your mouth around it, but it’s worth it.

Hummus, sprouted lentil, spinach, zucchini and orange bell pepper wrap with salt and pepper pop chips and a tangerine.
I also had a handful of sugar snap peas to mop up the rest of the hummus in the pot. :) It wasn’t until I’d finished a whole lot of hummus that my Ma reminded me we had the dentist in a few hours. So I’ll be in the bathroom, brushing the hummus smell away for the next hour or so…
We went out to eat for lunch at a restaurant I’ve completely forgotten the name of… but it’s in Bath, and it’s really cool looking inside. I was a little worried about asking to see if they had a vegan option, as there was ~nothing on the menu that I could’ve eaten, but I looked at the “bar menu” type thing and voila! One awesome vegan option staring me in the face.
And it was delicious. It was pretty filling, and it was my first experience of beets, but they were the best part! Well, except for the houmous… and the fries. But still, I can say I’m now a beet lover. Yum.

Toasted wholemeal peanut butter, blackberry jam and banana sandwich. FYI, if anyone ever wants me do something, make me a PBJ&B toastie and I’ll do anything you ask. Anything.

I haven’t had a PB&J in so long… it feels good to be back.
A meatball marinara sub… sorta? Without the marinara, meatballs or sub. Perhaps a vegan, healthified version?
I steamed some chopped courgette/zucchini, red bell pepper and tomatoes then cooked them with salt, black pepper, tomato paste, ketchup and sweet chilli sauce and put in all inside a toasted wholewheat pitta with a sprinkling of nutritional yeast and pumpkin seeds.
It filled a big hole and warmed me up - it’s below freezing again today and the wind is so bitter. Hot food for every meal is definitely a necessity! :D
Lunch today - 2 slices of lightly toasted wholemeal bread, spread with hummus and topped with spinach, grated courgette/zucchini, crumbled lentil balls, red pepper and sweet chilli sauce.
My stomach is singing.

Lunch today - the sandwich of awesomeness, vegetable chips (sweet potato, beetroot and parsnip) and grapes.
I could eat this every day. In fact - I might.
Step 1. Lightly toast two slices of wholewheat bread and spread a thick layer of hummus on one slice.

Step 2. Layer on the crisp, washed veggies. Spinach;

Grated courgette/zucchini and carrot.

Step 3. Add a drizzle of sweet chilli sauce and some freshly ground black pepper.

Step 4. Bread.

Step 5. Cut in half, admire, eat it like the healthy vegan pro you are.

Wholewheat wrap with hummus, spinach, carrot and a little sweet chilli sauce.

Celebrating Christmas morning in true fashion - with a peanut butter, jam and banana sandwich, toasted on the pan. Deelish.
Lunch today - the comfiest of comfort food.
Soft wholemeal bread, spinach, grilled veggie sausage and ketchup. Nom. (Also - not pictured, a braeburn apple the size of my head. Nearly.)
I had the best sandwich in the history of sandwiches earlier. Thick, soft wholemeal poppy seed bread with spicy Mexican bean pate and guacamole. It was a beast of a ‘wich but unfortunately my phone isn’t synching so there’s no photo to show. I just had to share with you how good this was. Ugh. Drool.
