
It’s too hot for a stodgy meal, so dinner tonight was essentially BBQ food without the meat. :)
Mangetout, carrot sticks, cucumber, red bell pepper, hummus, romaine lettuce with apple-balsamic dressing and brown rice pasta with chopped sun-dried tomatoes, pine nuts, black pepper and dried basil.

Lunch today - toasted GF brown roll with hummus, romaine lettuce, zucchini and red pepper and two small apples, chopped up with cinnamon. :)
Hummus Vs. the chickpea spread I had last week? Hummus wins hands down.

Lunch today was a beast of a sandwich - toasted wholemeal bread with lemon and coriander hummus, spinach, zucchini and carrot. Oh, and a few Japanese rice crackers.
You look like a fool trying to get your mouth around it, but it’s worth it.

I also had a handful of sugar snap peas to mop up the rest of the hummus in the pot. :) It wasn’t until I’d finished a whole lot of hummus that my Ma reminded me we had the dentist in a few hours. So I’ll be in the bathroom, brushing the hummus smell away for the next hour or so…

I missed wraps, they’re so versatile and ideal for lunches, but I’ve struggled to find vegan ones so haven’t had one in a while. However… Waitrose stocks vegan wraps, yay! Cheers, Waitrose.
And I had the other chocolate pudding. It seemed more mousse like in consistency today, which wasn’t a bad thing, it was just unexpected. Still delicious as ever. :D

There was a little hummus left in the pot by the time I was finished, so I used a few salt and pepper pop chips to finish it, and golly gee, it’s WONDERFUL. Such an awesome combination. Pop chips, I salute you, Sir. Or Madam.
Oh, and I had a crisp braeburn apple to finish lunch off. :D

We went “family shopping” today, and I know when we go to this place we ~always go to a cafe type thing called Pasty Presto, which unless I want to just have fruit, there’s nothing there for me to eat, so I packed this little snack box and a bottle of water instead. :)
We went out to eat for lunch at a restaurant I’ve completely forgotten the name of… but it’s in Bath, and it’s really cool looking inside. I was a little worried about asking to see if they had a vegan option, as there was ~nothing on the menu that I could’ve eaten, but I looked at the “bar menu” type thing and voila! One awesome vegan option staring me in the face.
And it was delicious. It was pretty filling, and it was my first experience of beets, but they were the best part! Well, except for the houmous… and the fries. But still, I can say I’m now a beet lover. Yum.

Half a wholewheat English muffin with spinach, a chickpea hummus burger and sweet chilli sauce, cherries and vegetable chips.

Just made some chickpea hummus burgers for dinner, to cook later. The only trouble is, I’ve made 4, and I’ll only eat one… there’s 3 going spare if any of you want them! ;D
I used this recipe, and I’ve never made them before, but they smell really good, and I like all the ingredients! It’s chickpeas, tahini, lemon juice, fresh parsley, grated carrots, oats, pumpkin seeds, olive oil and garlic. I added a little dried basil and cumin as I thought it’d go nicely, and pressed a few sesame seeds on to the top of the burgers for an added crunch. :3
Hopefully they taste good! I’ll have mine later with half a toasted wholemeal English muffin and lettuce and a side salad or spicy sweet potato wedges. Yum!

Lunch today was a mismatch of what ever was in the fridge.
“Protein Power Goddess Bowl”, zucchini sticks, hummus, couscous and red grapes. Unpictured - a chilli spiced rice cake and a ginger nut. :)

My dinner today. I was still so full from lunch I didn’t want anything heavy, so this is what I threw together.
Courgette and carrot sticks, hummus and tomato and herb couscous. Simple, healthy, yummy. Done.

Lunch today… it’s so colourful! :D
Carrot sticks, courgette/zucchini sticks, chilli parsnip crisps, red pepper hummus and roast vegetable couscous. That’s one happy tum.
