Breakfast - vegan ‘bake up’ at Inspiral Lounge, Camden Lock, London.
House made vegan bratwurst sausage, toasted rye bread with soya butter, grilled mushrooms and tomato, tofu scramble, house made baked beans and spicy hash brown.
This is my favourite breakfast of all time, unf. (My companion, also veggie, agreed!) I’ve had this once before when I came to London for my 18th birthday and ever since I’ve been dying to come back. I wouldn’t change a single thing on this plate - the baked beans are so much better than the canned variety, the tofu scramble is slightly crispy and flavoured perfectly and boy, that sausage. It’s so insanely close to real meat.
I’m going to have to learn how to make everything on this plate!

Today’s breakfast - breakfast ‘burrito’ - little gem lettuce, red bell pepper, scrambled eggs, ketchup, smoked paprika, oregano and black pepper all in a wholewheat wrap.
Breakfast today - banana, frozen berries, kale, iceberg lettuce, almond milk and flaxseed smoothie topped with nutty granola and a slice of wholewheat toast with soya butter and wildflower honey. :)

I’ve been a little lazy with my food lately so I’m trying to make sure every breakfast is something different, healthy and photogenic! :D
Breakfast - two slices of homemade poppyseed bread with soya butter, scrambled eggs cooked in chilli oil with oregano and black pepper and apple slices.
Cacao banana baked oatmeal topped with dried cranberries, pumpkin seeds, organic peanut butter, white chocolate and a drizzle of maple syrup.
Carrot cake pancakes with dried cranberries, pumpkin seeds, organic peanut butter and a drizzle of maple syrup.
I had some chickpeas I had to use up so I mashed those, added apple sauce, grated carrot, cinnamon, ginger, vanilla, buckwheat flour and a dash of maple syrup, mixed them all up and voila! It actually worked! I’ve never tried beans/pulses in anything sweet before but these pancakes were delicious, had a great texture and are packed with protein. :)

Banana French toast oatmeal with chocolate/almond/maple glaze, apricots, dried cherries and pumpkin seeds.
Oatmeal - steel cut oats, mashed ripe banana, cinnamon, unsweetened almond milk, vanilla and an egg whisked in at the very end.
Glaze - almond butter, melted 80% dark chocolate square, dash of maple syrup and some unsweetened almond milk. Yum! :D
