Homemade (vegetarian) chicken chow mein!
I added some coconut oil to a wok, then added some quorn ‘chicken style pieces’. Once they were cooked, I added some water, mushrooms, red bell pepper and sugar snaps, cooking for a few more minutes. I then added some fresh egg noodles, soy sauce, garlic powder, black pepper, paprika, tomato purée, nutritional yeast and a lil’ more water, stirring through until the sauce had thickened, then voila!
This was surprisingly delicious. I wasn’t really sure what I was doing with the sauce - I thought I was just going to put some soy sauce in, but I went a little crazy and it ended up tasting like chow-mein! It was so quick and easy too! Plus I got the quorn pieces with a 3 for 2 offer, so it’s not all that expensive either, provided you have the herbs/sauces on hand already.
And I know, the photo isn’t great, but sunset is at 4:30 now so there’s no more natural light, boo. :(
