Quinoa, vegetable and walnut salad in a soy/ginger dressing with spinach.
The dressing is a mix of ginger, tahini, reduced sodium soy sauce, sweet chilli sauce, agave nectar, olive oil and water. I tried to copy the dressing from the “Nutty Grain & Vegetable Salad” I bought from M&S yesterday - and it’s not far off! The veggies are courgette, red and green bell pepper, carrot and edamame, and everything was simmered in vegetable stock before the dressing was added. :)
