My first ever taco… and it’s vegan! My Ma bought some taco shells and salsa on a whim - luckily there was enough for me too. :D
I made the “meat sauce” using Sainsbury’s own soya mince, red onion, mushrooms, red pepper and baby corn, then added tomato paste, smoked paprika, cumin, s&p, cayenne pepper and reduced sodium soy sauce.
The shells are filled with the “meat”, shredded carrot and lettuce, and after this photo was taken I slathered on some tomato salsa. It was pretty darn delicious! I don’t know if this is what taco shells are usually filled with, but I liked it anyway. :)
